I prefer letting the salmon thaw at least a few hours to make removing the skin and slicing easier, but I have forgotten to take it out beforehand quite a few times, and it always turns out great regardless!
Should I use salmon with skin-on or skinless?

Ingredients
Air Fryer Salmon:
- 500g Salmon Fillet
- 1 tbsp olive oil
- 1 tbsp Italian Herbs Mix
- 1/4 tsp salt
- 1/8 tsp pepper
Creamy Mediterranean Sauce:
- 1 onion, diced
- 1 tbsp olive oil
- 2 cloves garlic
- 1 cup vegetable broth
- 1 tbsp Italian Herbs Mix
- 1 cup cherry tomatoes, halved
- 1-2 cups fresh spinach
- 4 tbsp Parmesan
- 1/4 cup cream, half & half or whipping
- salt, to taste
Rice:
- 1 cup white rice, uncooked
Instructions:
Prep The Rice:
- Begin by cooking the white rice according to the package instructions.
Cook The Salmon:
- Peel the skin off raw salmon and slice into 1-2 inch pieces. Add salmon to a bowl along with spices and olive oil and stir to fully coat the salmon pieces.
- Lay salmon pieces evenly in air fryer, either on parchment paper or a non-stick mat.
- Cook at 400F for 10 minutes, then gently turn the salmon over using tongs and continue cooking for an additional 5-10 minutes until it’s fully cooked.
Prep The Creamy Mediterranean Sauce:
- Once you have the salmon cooking in the air fryer, begin prepping the creamy Mediterranean vegetable sauce.
- Start by sautéing diced onions in a large frying pan with olive oil for 5 minutes over medium heat, stirring often.
- Stir in the minced garlic, sliced tomatoes, vegetable broth and Italian Herbs. Cover with a lid and cook for 10 minutes, until tomatoes are soft. Stir a few times to prevent sticking.
- Mix in the fresh spinach, parmesan and cream. Cook over medium-low heat until the sauce thickens and spinach wilts, about 2-3 minutes.
To Serve:
- Add a scoop of rice and some salmon pieces to a bowl, and cover with a portion of the creamy vegetable sauce.
