Healthy Chicken Fajita Bowls | Quick & Easy Meal!

These Healthy Chicken Fajita Bowls have become a go-to recipe for family dinners and once you try them out, you’ll see why! It’s a super quick & easy meal that’s full of flavour, sure to please even the pickiest of eaters. If you love this recipe, you should also try out my Beef Taco Bowls.

Earlier this year my fiancé and I visited Jamaica for the first time (he actually proposed while we were there!). This was the dreamiest all inclusive resort I had ever been to, and the food was unreal. 

We were only there for 4 nights and even though there were 7 restaurants to choose from, we fell in love with the Mexican and went there twice. Our favourite menu offering? You guessed it – the fajitas. 

Ever since we got back, I knew I had to try making some myself and now this recipe has become a staple in our house. It’s fast, easy and so delicious.

What to serve chicken fajitas with?

  • Rice and Beans (I like to cook the rice in some taco seasoning and then throw in canned black or kidney beans at the end)
  • Romaine Lettuce (diced)
  • Cheddar Cheese (shredded)
  • Sour Cream
  • Salsa
  • Canned re-fried beans
  • Crushed tortilla chips

I love having this as a fajita bowl but you can also serve it with wraps or taco shells.

Homemade Taco Seasoning

While you can absolutely use store bought taco seasoning (and I have many times! Our favourite is the Tostitos Mild), making your own at home is not only really easy but also a lot cheaper in the long run. 

To make your own taco seasoning, fill a 500ml jar with the following spices and shake to combine:

  • 4 tablespoons chili powder
  • 2 tablespoons ground cumin
  • 4 teaspoons salt
  • 4 teaspoons black pepper
  • 2 teaspoons ground paprika
  • 2 teaspoons garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon crushed red pepper flakes
  • 1 teaspoon dried oregano

Healthy Chicken Fajita Bowls Recipe:

Ingredients (serves 4):

Chicken Mixture:

  • 2 chicken breasts, boneless skinless, thinly sliced
  • 1 red or yellow onion, thinly sliced
  • 1 red pepper, thinly sliced
  • 1 carrot, julienned
  • 2 garlic cloves, minced
  • 2 tbsp butter or tallow
  • 1/4 cup homemade taco seasoning (or about 2/3rds of a store bought package)
  • 1/2 cup vegetable broth (or chicken)

Fajita Bowl Extras:

  • rice and beans
  • shredded lettuce
  • shredded cheddar cheese
  • salsa
  • sour cream

Method:

  1. Begin by cooking rice according to package directions.
  2. To a large frying pan, add onion, pepper, carrot, garlic and butter/tallow and cook over medium-high heat for 2-3 minutes.
  3. Then, add in the chicken and vegetable broth (this helps to prevent items from sticking to the pan and adds extra flavour). Cover and cook for 5 minutes.
  4. Stir in taco seasoning and add more broth if the vegetables and chicken seem too dry or like they’re sticking to the pan. Cover and continue cooking until chicken is white and vegetables are soft, about 5-8 minutes.
  5. Meanwhile, prep all your sides: rinse a can of beans and add to rice with some more taco seasoning, chop romaine lettuce, shred cheddar cheese, get out the salsa, sour cream and tortilla chips.
  6. Now create your fajita bowl by adding a big scoop of rice and beans, a scoop of the chicken mixture, and all the other sides of your choosing.

Leftovers? This Chicken Fajitas recipe will keep in the fridge for 2-3 days (in an airtight container).
